Tranh vẽ theo sự gợi ý của ông Jules Gustave Besson, Chánh Thanh tra các Trường Mỹ thuật và Mỹ nghệ ở miền Nam và cũng là Hiệu trưởng của Trường Mỹ thuật Gia Định đến hơn 10 năm. Học sinh của trường Vẽ Gia Định đã tham gia đông đảo để thực hiện chương trình này, tác phẩm của họ đã được Hội Ấn nghiệp và Trang Trí tập họp lại và in thành “Vựng tập về Thương mại, Văn hóa, Lãnh thổ, và Con người đất Gia Định”. Sách do Nhà xuất bản Paul Geuthner in theo các bản vẽ đã thực hiện trong các năm 1935-1938-1943.

Instant Pot (IP) Spicy Taiwanese Pork Noodle Soup
*RECIPE*
INGREDIENTS
2lbs pork neck bone/back bone
2lbs pork belly
1/2lb pork large intestines
12 pork balls
2 onions sliced
4 slices of ginger
1 bunch spring onions cut into 3rds seperate whites from green
6 garlic cloves smashed
2 large red chilli seeds removed and chopped
4 star anise
1 cinnamon stick
1tbsp of sichuan peppercorns
1tbsp of black peppercorns
2 bay leaves
3 tbsp of spicy bean paste
1/4 cup of dark soy sauce
1/2 cup of light soy sauce
1tbsp of sesame oil
2 rock sugars
1 tomato chopped
1 apple quartered
400 ml of chicken broth
4 stalks of bak choy
6 bunches of Taiwan dried noodles
DIRECTIONS - Serves 4-6 people
Par boil the pork bones, belly and intestines and tendon in salted vinegar water for 5 minutes then rinse. Cut the pork belly into cubes and slice your intestines about 1/2 in width. You may want to slice open the intestines to remove any excess fat.
Set your IP to lowest sautee mode and pour in about 4 tbsp of oil, enough to cover the bottom of the inner pot.

1/4 cup of dark soy sauce
1/2 cup of light soy sauce
1tbsp of sesame oil
2 rock sugars
1 tomato chopped
1 apple quartered
400 ml of chicken broth
4 stalks of bak choy
6 bunches of Taiwan dried noodles
DIRECTIONS - Serves 4-6 people

Toss in the onion, ginger, garlic, white ends in of green onion, and half or the remaning green onion. Save the last remaining 1/3 of green onion for garnish. Cook until onions start looking translucent.
Add in your red chilli, tomatoes, apple, star anise, cinnamon stick, rock sugar, bay leaves and cook for another 2 minutes.
In a spice bag put in your black and sichuan peppercorns. Add spice bag to the pot along with dark and light soy sauce, spicy bean paste and chicken broth.
Add the pork bones, belly, intestine and pork balls and top of with boiled water just enough to cover the pork. Pressure cook on high for 20 minutes, then do a quick release (QR) .
Carefully skim off the top layer of fat. Leave a little left over because those are wondering flavors.
Adjust to taste by adding salt, sugar or more bean paste. Remove spice bag and apples, cinnamon stick and star anise.
Cook the noodles until al dente then rinse under cold water, drain then place the noodles into individual bowls with the washed bak choy. You can use whatever kind of noodles you prefer.
Scoop the hot soup into the bowls, garnish with rest of the green onion and serve immediately.

In case you are still unsure about whether masking up can actually prevent the spread of COVID-19, a new report courtesy of the United States Centers for Disease Control offers some compelling evidence.
The case report, published July 14 in the CDC publication Morbidity and Mortality Weekly Report, focuses on two hairstylists working at a Missouri salon who unknowingly had COVID-19 in May. According to the detailed report, the first stylist worked with clients for eight days while symptomatic, and the second for five. while the second stylist did the same for five days. Over the course of around a week, 139 masked customers visited their salon and got cuts or treatment from them—both of them wearing masks as well. Not a single client or any of the other stylists in the salon became infected as a result.
Masks "Reduce Impact and Magnitude"
"These results support the use of face coverings in places open to the public, especially when social distancing is not possible, to reduce spread of SARS-CoV-2," they concluded. "With the potential for pre-symptomatic and asymptomatic transmission, widespread adoption of policies requiring face coverings in public settings should be considered to reduce the impact and magnitude of additional waves of COVID-19."
However, those who came into contact with the stylists when masks weren't involved did become infected as a result. Four individuals living in the same home as the first stylist ended up testing positive for COVID-19.
"Consistent and correct use of face coverings, when appropriate, is an important tool for minimizing spread of SARS-CoV-2 from pre-symptomatic, asymptomatic and symptomatic persons," the researchers wrote about their findings.
"It's Worth Wearing It"
Dr. Anthony Fauci, the country's leading infectious disease expert, recently admitted that one of the reasons the virus spread so feverishly in the beginning of the pandemic because people were confused about the effectiveness of masks.
"We have to admit it, that that mixed message in the beginning, even though it was well meant to allow masks to be available for health workers, that was detrimental in getting the message across," Dr. Fauci said in an interview with Mary Louise Kelly of NPR's All Things Considered.
"No doubt about it."
While it is still up for debate exactly how much protection wearing a mask provides you, he maintains that any protection is better than nothing.
"It isn't 100% protection by any means, but certainly the amount that you get is worth wearing it, not only worth wearing it, but really compels you to wear it."
